Nutella Cheesecake | Friday Recipe

Ingredients
250g digestive biscuits
75g unsalted butter, softened
400g jar Nutella, at room temperature
100g chopped toasted hazelnuts
500g cream cheese, at room temperature
60g icing sugar

Method
Break the digestives into the bowl of your KitchenAid, add the butter and a tablespoon of Nutella. Blitz together until it starts to clump. Add 25g of the hazelnuts and pulse until combined

Tip into a 23cm round springform tin and press into the base. Chill in the fridge.
Beat the cream cheese and icing sugar together until smooth and then add the rest of the Nutella. Continue to beat until all combined.

Take the springform out of the fridge and carefully smooth the Nutella mixture over the base. Scatter the remaining 75g of chopped hazelnuts on top. Put back in the fridge for to chill and set (at least 5 hours, ideally).

This tastes best when it’s served straight from the fridge.

Peanut Butter Popcorn Bites | recipe

Easy recipe, with delicious results!

85g popped popcorn (cooked as per manufacturers instructions)
2tbsp crunchy peanut butter
6tbsp water
100g White Chocolate

Pop popcorn as per instructions on the packet

Meanwhile, gently heat the peanut butter and water together in a saucepan, until you have a smooth, warm paste

Mix popcorn and peanut paste together until well coated, and set aside

Melt the chocolate in the microwave (45 seconds should do it)

Add chocolate to the popcorn mix, and stir until combined

Then – and this is the fun part! – take half a handful of popcorn mix, and squeeze together to form a ball. Place on a baking tray covered in baking paper. Repeat this until all of mixture is used

Put the tray in the fridge for 20 minute, to allow to set

Honeycomb | recipe

I had a few problems with this one, to be honest; it took a few goes with a few different recipes to get it right!

5 tablespoons caster sugar
2 tablespoons golden syrup
2 teaspoons water
1 teaspoon bicarbonate of soda

Melt sugar and syrup in a pan over a low heat. When melted, add the water and bring to a boil and keep it boiling for about 5 minutes until it turns to a light golden brown colour.

Remove from heat <– this is very important!!

Add bicarb to the pan and stir for about 10 seconds.

Pour onto a baking sheet and wait for it to cool and set.

Smash it up and enjoy!

This would be lovely with chocolate on it, like Cadbury’s Crunchie!!

As I said, it took a while to get this right; see below for my epic fail (although Mr B kindly said it just tasted like a brandy snap…!!)

Marshmallow Fridge Cake | recipe

This is one of my favourite recipes ever ever ever! It’s so ridiculously easy to make, and is a total crowd pleaser! Whenever i’m invited to a party, i’m always asked “please bring some of your yummy malteser/marshmallow thing!”

100g butter
6 tbsps golden syrup
250g cooking chocolate (milk)
200g crushed digestive biscuits
200g crushed Maltesers
2x handfulls mini marshmallows

Melt the butter, the golden syrup and chocolate over a low heat. When it’s all melted, take off the heat and add the crushed digestive biscuits and crushed Maltesers. Add the mini marshmallows at the last minute. Pour into a square, lined baking tin. Push in a few loose Maltesers and top with hundreds and thousands! Chill in the fridge then cut up into small squares.

Keep in the fridge (although it will not last for long!)

You can use white chocolate instead of milk chocolate… you can get white chocolate Maltesers and it works SO well! Adding some peppermint essence gives it a little something extra too…!
